Graham Cracker Cake

Crust: 20 graham crackers
1 cup butter or margerine

Crush crackers very fine. Cut butter into them.
Line bottom and sides of 9" cake pan. Pat down
to hold firmly together.

Filling: 1 lb. Cream cheese
1 T lemon juice
3 eggs, separated
½ cup sugar
1 t. vanilla

Mix cream cheese until smooth. Combine it with sugar,
lemon juice, egg yolks only and vanilla. Beat egg whites
until stiff, fold into cream cheese mixture. Pour into pan
and bake 25 – 39 minutes in 350 degree oven. Remove
from oven and cool 20 minutes.

Topping:
1 c. sour cream
½ c. sugar
½ t. vanilla
Mix together, spread on to cooled cake.
Put back into oven for 15 minutes.

Lekvar Nut Cake

Preheat Oven to 350 degrees

Walnut Filling:
½ lb. Ground walnuts ½ cup sugar
½ t. vanilla
½ cup boiling water
Pour boiling water over the entire mixture until it thickens;
not too thick, but not wet.

Dough:
3 cups flour
3 t. baking powder
½ t. salt
1 cup powered sugar
Sift above together.

½ lb. Butter
½ cup heavy sweet cream
3 egg yolks, plus 1 whole egg

Kneed dough by sifting dry ingredients into bread board
using a knife. Cut in the butter. Kneed well; add eggs, using
a knife cut through mixture until well blended. Use additional
flour if necessary. Divide into 3 parts, decreasing , decreasing
by small sections. Roll into ¼ inch thick sheets the size of cake pans.
Cover the bottom of the pan with the heaviest amount of dough,
covering sides. Spread with prune jelly, then add a layer of dough,
topping with the nut mixture, roll the last section of dough with
hands into rolled strips and place into criss cross pattern across
the top of the cake and edges also.
Sprinkle with confectioner’s sugar.

NOTED — 2007 transcriber’s notes:
IT DOES NOT tell you anything else here. I’m sure by the recipe
starting out that the oven is WARMED to 350 — that there is some
baking involved here. This is going to be done by test-trial I guess.
Still I’m sure a VERY worthy recipe!

Also noted — Names are shown where they were in
original edition. Not all recipes were Id’d.
Some recipes do seem incomplete. Left as were.

Mexican Wedding Cake

(Favorite Christmas Cookies)

½ cup butter
½ cup shortening
1 t. vanilla
2 cups flour
1 cup chopped walnuts
6 T. confectioner’s sugar

Cream butter, shortening and vanilla add in with flour and walnuts.
Mix well, shape into small balls.
Place on ungreased cookie sheet. Bake in hot-400 degree oven
for about 10 minutes. Roll in confectioner’s sugar while still warm.
Store overnight before serving. Makes 3 dozen.

Chess Pie

3 whole eggs
1 ½ cup sugar
1 T. meal
1 stick margerine
1 T. vinegar
1 t. vanilla
1 unbaked pie shell

Cook ingredients in double boiler until butter melts.
Pour into pie shell and bake 20 minutes in 250 degree oven.
Increase temp to 350 degrees and bake an additional 25 minutes.

Rum Cake

Crumble ½ cup pecans in bottom of greased and floured tube
or bundt pan.
Combine
1 package butter recipe fudge cake mix
or
1 package buter recipe golden cake mix
1 small box vanilla instant pudding
½ cup light rum–Bacardi was noted
½ cup water ½ cup oil
4 eggs
Beat 2 minutes with electric mixer.
Bake 50 to 60 minutes at 325 degrees.
Leave in pan and pour hot rum glaze over the hot cake.
Cake will shrink. Cool 30 minutes and remove from pan to cake plate.

Hot Rum Glaze

Boil together for 2 or 3 minutes:

1 cup sugar
¼ cup rum
1 stick butter
¼ cup water

Strawberry Cake

Put into mixing bowl
1 box white cake mix
3 T. plain flour
1 box strawberry jello
1 cup cooking oil
4 eggs
½ cup water
Beat together until well mixed.
To this mixture add:
10 oz frozen strawberries, which have been thawed
at room temperature
Put into 3 nine inch round cake pans and bake at either
275 degrees for 1 hour or 30 minutes at 325 degrees.

Salad Dressing Cake

2 cups flour 1 cup sugar
1/8 t. salt 1 t. vanilla
1 cup salad dressing-*
3 T. cocoa 3 t. soda
1 cup hot water
Mix all together. Bake at 350 degrees for 35 minutes.

Noted–what KIND of salad dressing is not made
clear but by not seeing any OIL in the recipe it makes
me GUESS ? that it would be Italian dressing ?

White Fruit Cake

1 cup shortening
1 cup sugar
4 egg yolks *
¼ t. salt
* Keep the 4 whites for later
Cream these 4 ingredients.

Add: ¾ cup water and flavoring– vanilla, lemon
or almond. Mix well.
Add:
1 small bottle each of green and red marachino cheeries
cut up and drained
6 dried apricots cut up
1 small can crushed pineapple
½ cup chopped nuts 1 box coconut
Mix all.

Sift together 3 ¼ cups flour
4 t. baking powder
Beat and add egg whites.
Mixing all together.

Bake 3 hours at 275 degrees.

Apple Pie

1 recipe pastry for double crust pie
¾ to 1 cup sugar
½ t. cinnamon
1 t. salt
1 t. grated lemon rind
2 T. flour
6 cups pared sliced apples
1 T. lemon juice
2 T. butter
Preheat 450 degree oven

Combine sugar, cinnamon, salt, lemon rind and flour in mixing
bowl. Arrange apples in layers in 9 inch pastry lined pan, sprinkling
cinnamon and sugar mixture over each layer. Sprinkle with lemon
juice and dot with butter. Roll out remaining dough. Moisten rim of
bottom crust, place top crust over filling and mold edge pressing to
seal. Flute edge.
Bake at 450 degrees for 10 minutes then turn down to 275 degrees
for additional 45 to 50 minutes, until apples are tender when pierced with a fork.

Swedish Apple Pie

1 egg beaten
¾ cup sugar
¼ t. vanilla 1
½ cups diced apples
½ cup chopped nuts
½ cup sifted flour
1 t. baking powder
½ t. salt
Mix together eggs, sugar, etc.
Pour into greased pyrex pie plate. Bake at
350 degrees for 30 minutes.

New Sandwich

Spread bread with mayonnaise. Add thin sliced cream cheese,
thin sliced onion, thin sliced dill pickle.

Party Frankfurters

1 package all meat frankfurters —
2007 translation–HOT DOGS
1 9 ounce jar mustard
1 9 ounce red currant jelly
Cut frankfurters into 1 inch lengths. Warm mustard and jelly together,
add in frankfurters and let simmer about 15 minutes or until hot through.
Serve with toothpicks. Keep warm in chafing dish.

Brownie Pie

3 egg whites dash of salt
¾ cup sugar
½cup chopped nuts
¾ cup chocolate wafer crumbs
1 t. vanilla
½ pt. Whipped cream

Beat egg whites and salt together until stiff. Gradually add sugar.
Beat until stiff. Fold in crumbs, nuts and vanilla. Put in 9 inch
buttered pie plate. Bake at 325 degree oven for 20 minutes.
Cool. Spread top with whipped cream. Chill.
Trim with grated unsweetened chocolate.

1 box chocolate wafers makes 3 pies

Lazy Strawberry Pie

Add 1 cup boiling water to 1 cup sugar
2 t. cornstarch, and ½ t. salt.

Cook until thick and clear. Take off heat add
3 T. Strawberry jello. Add strawberries and pour
into pie shell. Set at least 2 hours in refrigerator.

Apple Bake

Cream: ¾ cup shortening and 2 cups sugar. Add and
Mix well 2 well beaten eggs. Sift together 3 times
2 cups flour, 1 t. cinnamon, 1 t. nutmeg, ½ t. soda
and ½ t. salt. Blend in: 1 can apples well drained
and chopped. Spread in greased and floured
9 x 13 pan.

Topping: Crumber together ½ cup brown sugar ,
2 t. flour, 1 cup chopped pecans and 2 t. butter.
Sprinkle over batter.

Bake 40 minutes in 375 degree oven.

Mile High Strawberry Pie

2 8” pie shells baked
10 oz. Pkg frozen strawberries
1 cup sugar
2 egg whites
½ pt. whipping cream
1 T. lemon juice
1/8 t. salt
1 t. vanilla

Place defrosted berries, sugar egg whites
Lemon and salt in large bowl.
Beat with electric mixer for 15 minutes
Till mix is stiff and holds its shape.
Whip cream and vanilla fold into strawberry
Mixture. Pile lightly into pie shells and freeze
Several hours or overnight. Garnish with
Whole strawberries as desired.

Wine Dessert

Soak for 4 minutes 1 pkg Knox gelatin in ¼ cup
Cold water. Stir into 1 ¾ cup muscatel heated to a

Cherry Coffee Cake

3 cups all purpose flour
1 t. baking powder
1 t. baking soda

1 cup sugar
2 sticks butter or margerine
1 cup sour cream
2 eggs
1 can cherry pie filling
1 t. almond flavoring
½ cup shredded or sliced almonds
½ cup sugar and 1 t. cinnamon, mixed

Sift dry ingredients and sugar; cut in butter
With pastry blender. Add unbeaten eggs, sour cream and
Beat well. Spread ½ the batter in the bottom of ungreased
9” c 13” waxed paper lined pan. Mix almond extract in filling
and spread over batter in pan.
Add other half of batter.
Sprinkle sugar and cinnamon mixture over almonds.

Bake 45 minutes at 350 degrees.

Peach Cobbler

Melt a stick of butter in a pyrex dish.
Mix 1 cup each self rising flour, milk and sugar.
Stir like pancake batter. Add 1 t. vanilla.
Pour over melted butter in pan and add 1 ½ cup sliced
Peaches. Sprinkle with brown sugar and cinnamon.
Bake at 350 degrees for 30 minutes

Strawberry Bread

3 cups flour
1 tsp. each, baking soda, salt, and cinnamon
2 cups sugar
4 eggs
1 ¼ cups vegetable oil
½ - ¾ quart fresh strawberries, chopped coarsely
1 ¼ cups pecans, chopped (optional)

Mix all ingredients – add strawberries and nuts last. Spoon batter into (2) well greased loaf pans or (1) bundt pan. Bake at 350 degrees for 50-60 minutes.

Banana Nut Bread

2 ½ cups all-purpose flour
1 ½ tsps. baking soda
½ tsp. salt
¾ cup butter, softened
1 ½ cups brown sugar, packed
2 eggs
3 cups ripe bananas, chopped (about 7 medium)
1 tsp. pure vanilla extract
1 cup chopped walnuts

Blend all ingredients with a mixer until just combined. Add nuts. Spoon batter into (2) greased loaf pans or (1) bundt pan. Bake at 325 degrees for 60-70 minutes.

FROM FRENCH DINNER WITH THE CHOIRS

Vinaigrette Dressing

½ cup salad oil ½ cup lemon juice
1 TBS raspberry jam ½ tsp. salt
½ tsp. thyme, oregano, basil or all three
¼ tsp. dry mustard ¼ tsp. pepper
Mix together in a blender. Makes 1 cup dressing
